I've just rediscovered mushrooms after a year or so of being afraid I was allergic to them. We both love 'em so we've been eating them in every shape and form since getting the all clear. Today I wanted an easy tea so I decided on mushroom burgers - a favourite old recipe from one of Nigel Slater's books (sorry, I can't remember which one).
I can't promise that this is a faithful rendition from the original recipe but it's what I do these days and it seems to work OK. Easy ingredients - big mushrooms, some parsley, a couple of cloves of garlic, some butter and a lemon.
I usually stick the butter in the microwave for a few seconds to soften it up...
... and then throw in the crushed garlic and chopped parsley. Before you look at the pics, bear in mind that I never promised it was healthy!
Slather the buttery mixture onto the tops of the mushrooms...
and stick them in the oven at about 180 for around 20 minutes or until they look like this
Spread some wholegrain mustard on the sliced rolls then use the bottoms to mop up all the lovely buttery mushroom juices. Pop the mushrooms inside the rolls, add a squirt of lemon juice and season.
